    Pumpkin Bread
    • This recipe is timeless and any beginning cook can make it with success. It is moist and gooey and when made in small loaves, it is perfect for sharing.

    Pumpkin Bread




    Ingredients:
    3 1/3 cup flour
    2 cups granulated sugar
    1 cup brown sugar
    2 teaspoons baking soda
    1 teaspoon salt
    1/2 teaspoon baking powder
    1 teaspoon cinnamon
    1 cup oil
    2 cups pumpkin ( one 15 oz. can of pumpkin)
    4 eggs
    1/4 cup water

    Directions:
    Preheat oven to 350 degrees.
    Stir together dry ingredients so that they are well mixed. Add oil, pumpkin, eggs, and water. Mix all together with an electric mixer until well blended. Pour into 6-7 small loaf pans that have been coated with a cooking spray.
    Bake for approximately 45 minutes, but check at 30 minutes. Test for doneness by inserting a toothpick. When just removed from oven, coat with melted butter for more flavor and a glossy appearance.

    Additional Idea: Try glazing with caramel ice cream sauce or your favorite icing. Generally, I slightly melt the icing, which adds to the glazed appearance on top of the loaf.
