Caramel Icing
*This caramel icing recipe is wonderful on cinnamon rolls, brownies, pumpkin bread, soft cookies, and EVEN carrot cake.

Caramel Icing
Ingredients:
1 stick (1/2 cup of butter
1 cup firmly packed brown sugar
ΒΌ cup milk or half and half
1 cup miniature marshmallows
2 cups powdered sugar
Directions:
Melt butter in a medium saucepan. Add brown sugar and milk, stirring to blend. Heat to boiling.
Cook about 1 minute, stirring constantly. Remove from hear and stir in marshmallows until they are
melted and mixture is smooth.
Place powdered sugar in mixer bowl. Add brown sugar mixture and vanilla and mix until smooth and
creamy.
Thin with a little milk is mixture is too thick for the purpose. Otherwise use while it is warm.
